Definition: In cannabis, aromatic compounds formed from the dehydration of alcohol. Sweet, such as vanillin or cinnamaldehyde, or pungent scents. Studies suggest aldehydes can influence terpenes by chemically changing their makeup, similar to how esters change or mask the scent of terpenes.
